Vegan Cinnamon-Apple Baked Oatmeal

Ingredients

  • 2 1/2 cups old-fashioned oats
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cups unsweetened soy milk
  • 2 sweet apples, grated and unpeeled (such as Honeycrisp)
  • 2 tbsp maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 cup walnuts, chopped
  • 2 cups strawberries, sliced
  • 1 cup raspberries
  • 1 cup blackberries

Directions

Preheat the oven to 375°F (190°C) and lightly coat an 11-by-7-inch glass baking dish with cooking spray.

In a large bowl, combine the oats, cinnamon, baking powder, and salt. Add the almond milk, grated apple, maple syrup, and vanilla extract, and stir until well mixed. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the chopped walnuts over the top. Bake for about 35 minutes, or until the oatmeal is set and lightly golden.

Meanwhile, in a small bowl, gently combine the strawberries, raspberries, and blackberries. Divide into 6 small airtight containers.

Let stand for 5–10 minutes before cutting into six pieces. Let cool completely, then store each piece in an airtight container for easy transport.

To reheat, place in the microwave for 60-90 seconds, or until hot. Top with cold berry mixture and enjoy.
